One-of-a-kind handmade rice bowl with Taiza crabs

Rice bowl making experience at a local inn using crabs caught in Taiza, Japan's leading crabbing area. The female snow crabs used as an ingredient are on the smaller side, but the rich miso, bubbly textured roe (fertilized), and unfertilized roe on the inside of the shell are widely enjoyed as delicacies.

Uniquely local cooking experience using exceptionally fresh crabs
In this program, you can experience cooking a "female snow crab rice bowl" inspired by a fisherman's meal. The first step is to boil the crab in soup made with Taiza sea salt. Once boiled, the crab is broken down into smaller pieces using your hands or scissors.

When boiled in the specialty soup, the body expands and the unfertilized roe appears.

The boiled crab is disassembled. It is filled with miso.

The flesh inside the legs is difficult to extract, so it is pushed out using a pestle.

After the flesh and roe are carefully extracted and plated, it is time for the last task of arranging the ingredients! The important part here is to visualize a "fisherman's meal" and scatter the ingredients confidently. The resulting female snow crab bowl with gem-like roe, subtly sweet flesh, and rich miso will create a perfect harmony in your mouth. If eaten with local Tango sake, you can enjoy an even deeper flavor.

Finally, complete the dish by adding wasabi. The mizuna greens produced in Kyotango provide a refreshing compliment.
