"Chikuwa" is a fish-based, jelly-like Japanese treat. The Hamasaka variety, with an aroma that reminds one of the local area's rocky shoreline, has a thick, firm consistency. Hamasaka, a place that enjoys the gifts from the Sea of Japan, has long had a thriving business of making chikuwa from fresh fish. Yonetora Shoten has been in business since 1868. Here, they knead the combined ingredients according to a secret recipe handed down over generations and cook up the chikuwa every morning. You'll get a tour of the factory to see how it all works, after which you can sample from buoyant, soft, freshly-prepared chikuwa. It has a special flavor you can only experience early in the morning!
