Chef Kentaro Nakajima has been a gibier (game) hunter for over 20 years. He works constantly to keep the local wilderness and agricultural environments safe, eliminating pests that disrupt forest environments and cooking them to perfection. On this tour, Nakajima teaches guests about the state of bird and animal pests in the area, then guides groups into the wilderness to observe on a deer hunt, as well as cleaning and processing. After that, Chef Shinsaku Shiomi of Fukuchiyama's authentic French restaurant "Bistrot q" will prepare the freshly butchered venison. Chef Shiomi pairs the meat with vegetables he grows himself, for an incredibly healthy set of French cuisine courses. [Schedule] 10:00 to 1:00 PM hunting demonstration (Nakajima explains and shows off some of the damage invasive animals cause in the Yakuno area, as well as some of the equipment used in hunting before leading the way into the woods. Participants will see actual hunting in practice, such as finishing of deer caught in traps, etc. The deer is then taken to a processor, and participants can observe the work from cleaning to butchery.) 6:00 PM to 8:00 PM French gibier cuisine (Chef Shinsaku Shiomi of Bistrot q, an authentic French eatery, will prepare courses of venison cuisine for the group to dine on. The "Tamba momiji" breed of gibier venison that Nakajima hunts is distinctly fresh-tasting with minimal gamy scent. Experience tours can also be arranged during free activity time from 1:00 PM to 6:00 PM by special request. Please contact us separately if you will need pick-up or drop-off services. Clothes that are easy to move in for the hunting demonstration. Casual wear is fine for the French restaurant. Good cold weather clothing is required if there is deep snow on the ground. The guide and instructor will explain everything with an emphasis on your safety in order to prevent accidents during each activity. Please be sure to follow their instructions.
