Kakinoha sushi, persimmon leaf sushi, has been a local dish made during summer festivals at homes in the Yoshino region of Nara Prefecture since the middle of the Edo period. Today, this popular pressed sushi (oshizushi) is a culinary symbol of Nara and the entire Kansai region. At Hirasou, a long-established persimmon leaf sushi restaurant, five stores, including the Yoshino main store, offer hands-on menus for groups.
